I’m so happy and grateful to celebrate my favorite month of the year and my birthday, TODAY! with this my opening post of Simply Crudelicious ~ a blog dedicated to simple RAW VEGAN recipes, simply delicious: Low fat, plant based, fruit filled, whole foods!

To celebrate my birthday and simply crudelicious opening post I wanted to make something really special: sweet, healthy, nutritious… delicious!, yet very simple!
All I’ve been craving for the last four weeks has been BANANA ice cream! Oh my! So what more simple, nutritive, flavourful and delicious than 1-ingredient BANANA NICE ICE CREAM?! It is so good, so simple, so healthy, so delicious! You better right-now-go make this recipe!
You have no idea what you have been missing if you haven’t try Banana ice cream before! It gets so, so creamy it reminds me the texture of the vanilla butter cookie dough recipe my mom use to bake ~I’d loved it but, healthy, raw and vegan weren’t there.
It makes my mouth water! So, let’s go make raw, vegan, nut-free, Banana nice ice cream with deliciously sweet caramel berry topping sauce! Siiii!
All you need to make this insanely delicious Banana ice cream is perfectly ripe frozen BANANAS. Bananas are ripe when they have speckles / brown spots on their skin (when yellow/green they still are starch, and that can cause digestive issues). Cut them into chunks and process in a food processor until you get the Umm-yummy-creamy-creamier consistency of your dreams! Chill it in the freezer!
Now let’s go prepare “Caramel berry topping sauce”!. Put either fresh or frozen berries: strawberries, blueberries, blackberries, raspberries, cherries (pits off) in a blender with oogie gooey pitted medjool dates and water, blend… and Voilá! Best ice cream topping ever! OH MY! it doesn’t get any better than this! I’m in ecstasy!. Vanilla Ice cream never tested this good!
I want to sing out loud: It has No artifitial flavors, it’s refined sugar-free, fat-free, nut-free! Raw, vegan, health-giving Banana nice ice cream! YES! (check the nutritional info I provide at the end of the post to see!).
I’ve been in Banana nice ice cream island mode four weeks in a row, enjoying this heavenly creamy ice cream as a pre-dinner treat after work. All you can eat-ice-cream without the guilt. You can accompany it with pieces of diced fresh or dehydrated fruits like mango, papaya, persimmons, apple, pear, peaches and also veggies: cucumbers slices or sticks, celery sticks, lettuce leaves or rolls! - You can subs fresh assorted berries for frozen berries. Just let them thaw a couple of minutes before blending.
- If your food processor is not powerful enough you can substitute 1-2 frozen bananas for fresh ripe bananas, to facilitate the processing.
- Freeze the caramel berry sauce and ice cream if any leftover. It will keep well in the freezer for a long period although always best when fresh.

- To make the caramel date berry sauce I used my Blendtec Blender, I totally love it! it has made a huge difference for me on my raw vegan cuisine journey, I highly recommend it for your kitchen tools collection.
- For the ice cream I use my Cuisinart Food processor, it makes soft, rich, deliciously creamy ice cream. Miam!
- To place the creamy ice cream I used this loaf pan, 😉 I love it!
