One of my favourite meals of the day is DINNER, Yey!. After a day of eating delicious, juicy and sweet fruits for breakfast and lunch, either by themselves enjoying mono-meals or in smoothies, fruit ice creams or juices, I so look forward to the last meal of my day. Dinner!,Yum!.
I really have fun immersing in the kitchen playing and ideating recipes that are tasty, savoury, appealing, nourishing and super healthy. That are raw, vegan, plant based, fruit filled, gluten free with whole, fresh, ripe fruits, veggies, nuts and seeds following a food combining guidance as a reference for better digestion and assimilation. I’m on Day 21 of my 21 Day juice challenge!
Yey!, meaning today is the last day of my juice detox – woohoo!, I can’t believe I made it!, Hooray!. 21 Day juice detox seems like an impossible challenge, but it is not!. If I can do it, You can do it too!. Go, go, go!.
I am immensely happy and grateful for this experience I embarked upon. I have more energy, my skin is smooth, my mind and thoughts are more clear, I feel more in harmony with my inner joyful self, feel lighter, became an early riser (4:30am), I can see improvements in my personal ashtanga yoga morning practice, I meditate longer (20min before 10-15min)… I have to say, juicing is a new healthy habit I fall in love with completely!.
One-Bowl Vegan veggie Salad in a Juice Drink
I love eating my greens and big salad bowls for dinner so I wanted to reward myself and make something different and special today. I wanted to create a savoury veggie juice drink, a healthy version of the popular V8 vegetable juice with just 100% natural, fresh ingredients. The best V8 veggie juice you’ll ever need!.
What are the Ingredients in a V8 Vegetable Juice
For this veggie juice you’ll need: tomatoes, carrot, beets, celery, parsley, watercress and spinach. I made my own twist to the original recipe and add some more goodies: sweet potato, lemon and red bell pepper. You can subs or omit any veggie ingredient that you don’t quite fancy or are yet not familiar with, no big problem!. Start with the veggies you love the most and scale back any ingredient as your tastebuds develop.
Veggie juices are a great way to get more greens in your diet and replenish your body with abundance of vitamins, minerals and phytonutrients for optimal wellbeing. Woohoo!.
Seriously, this drink it’s like having a savoury spiced up tomato soup for real!. A healthy dinner meal packed in a veggie juice drink!. So tasty, so fragrant, so delicious!.
How to make a juice without a juicer but with a Blender instead
As I told you on my previous posts, you can totally make juices without a juice extractor or expensive juice machines, just blend your ingredients in a high speed blender until smooth then run the juicy mixture through a fine mesh strainer or colander, with or without a thin kitchen towel or nut milk bag, using your hands or wooden spoon or spatula to press down the pink purple juice and Voilá!, juice ready to drink!. It is real easy!.
Pair this veggie juice drink as an entrée to my delicious Red Pepper Pesto Zucchini Pasta or any other veggie bowl of your choice, for a complete joyful healthy dinner meal. Serve it on special cocktail glasses and start an veggie juice-alcohol free happy hour party with friends after work, or set up a romantic ambiance with a loved one at home, get creative, have fun, enjoy!.

Real V8 vegetable juice recipe - Homemade
Yield 1200 ml
Savoury, tasty, real delicious V8 vegetable juice recipe with just 100% natural, whole, plant based, fresh, raw vegan ingredients. So refreshing, rich in vitamins, minerals and electrolytes.
4 cups beefsteak tomatoes ~ chopped in fourth (4 medium to large tomatoes ~ subs for Roma tomatoes)
1 cup beetroot ~ cut in fourth (2 small or 1 medium beetroot)
1 cup carrots ~ chopped (1 medium or 2 small carrots)
1/2 cup sweet potato ~ cut into chunks (1 small)
1 1/2 cup red bell pepper (1 medium red bell pepper)
1 cup tightly packed spinach (leaves and stems)
1 cup romaine lettuce ~ chopped (3~4 medium leaves)
2 cups celery stalks ~ chopped (4 celery stalks)
1/2 cup tightly packed watercress (leaves and stems)
- 1/2 cup tightly packed parsley (leaves and stems)
3 tbsp lemon juice (juice of 1/2 lemon ~ freshly squeezed)
Place all your ingredients in a blender and blend until smooth.
Place a fine mesh strainer over a large round bowl. Pour your smooth mixture over and strain with the help of a wooden spoon or spatula, or simply give it gentle round movements to let the liquid run through. You can also use a cheese cloth or nut milk bag.
Transfer the juice into a large 1litre glass jar with lid.
Chill it for a couple of min. in the fridge or drink immediately as is.
- Drink it up!
- Juice will keep well in the fridge four up to 72 hours ~ 3 days although always best when fresh. Shake before drinking.
